The left over rinds from the aged Parmesan that I purchase at Costco I store in zip lock bags in the freezer and use them in my Pasta Fagioli soup, spaghetti sauces, Risotto and more to enhance the flavor, and bring a nuttiness and beautiful rich flavor to raise it to a elevated level.
