Marinated Goat Cheese
Need a quick go to appetizer? This is a hit and so simple and pretty. I used a vintage glass refrigerator jar to serve it in and the clear glass showed the layers of scrumptiousness.
Note; As photographed in this picture I added a few fresh pea shoots from the garden because of the time of year and thought it would be so pretty. Its always so fun to use seasonal items from the garden.
Marinated Herbed Goat Cheese;
2 (3oz) logs goat cheese (I purchased my large log at Costco and saved quite a bit)
salt and freshly ground pepper
3 tsp finely chopped Dill
5 tsp Julienned Basil
5 tsp finely chopped Parsley
Red Pepper Flakes
3-4 Tbsp Olive oil
Sliced warm Bagguette
Using a thin piece of wire to cut, slice the log of Goat cheese into 1/2 inch discs. Place a single “loose” layer of the goat cheese on the bottom of your dish. Sprinkle with salt, pepper, and a little of each of the herbs and pepper flakes, drizzle with Olive oil. Top with another round of the Goat cheese discs repeating layers and ending with the olive oil until you’ve used all of the Goat cheese. Cover with plastic wrap and let stand for 1 hour at room temperature before serving, or you can refrigerate up to 24 hours. serve with warm Baguette bread.
