Roasted Beet Salad with Goat cheese and Pepitas

3-4 Fresh Beets cleaned and cut into 1-1/2 in pieces

Olive Oil

Salt and Pepper, to taste

2 Tbsp Herbs de Provence

4 Oz Fresh Goat Cheese

Had full of lightly salted Pepitas ( Pumpkin Seeds ), I found mine at Trader Joes

Preheat oven to 400 degrees ( I set mine on roast rather than bake, but bake will work too)

Toss the Beets in 3 Tbsp Olive Oil and spread out onto a cookie sheet, sprinkle with herbs and a tsp each of salt and pepper

Cook till tender/ approximately 30 minutes

Let cool

Place the beets on a tray and add dollops of goat cheese and sprinkle with the seeds. Drizzle with good quality olive oil and enjoy!

If desired garnish with chopped fresh Parsley
