Romaine Salad with Prosciutto Crisps
This is a simple salad in that there are just a few ingredients, but it’s what you do with them that counts!
Ingredients
4 Slices Prosciutto
1 pint cherry tomatoes
1 small head of romaine
Several Shavings of aged parmesean
balsamic dressing
Pre heat oven to broil
Clean and drain Romaine leaves leaving them whole, set aside.
On a parent lined cookie tray arrange the slices of Prosciutto in one layer and broil till lightly browned and crisp,( about 1-2 minutes) keeping your eye on them. flip and crisp up the other side, remove from oven.
In a small skillet warm a drizzle of olive oil ( about 1 Tbsp) and “blister the cherry tomatoes
On each plate arrange 3-4 leaves of Romaine, top with blistered tomatoes, Shaved Parm, and lay the Prosciutto off to the side and drizzle with Balsamic dressing. ( my recipe is below, but store bought is just fine too! ) enjoy!
Balsamic Dressing
2 Tbsp Honey
1 Tbsp Dijon Mustard
1/2 tsp fine sea salt
1/2 tsp freshly crushed black pepper
1 Large garlic clove finely minced\1/4 cup good balsamic vinegar
3/4 cup Extra Virgin Olive Oil
Whisk all the ingredients together well to fully emulsify.
Store in Refrigerator where it should keep for a couple months. If the oil and vinegar separate, bring to room temperature and shake well to combine.
