Just a tip from someone who uses a lot and I mean a lot of Parmigiano Reggiano…. Save yourself time and money by purchasing your aged parm at a big box store and put your food processor to work! Keep some it in a airtight container in the frig, and the rest in the freezer and you’ll have it ready to go for your eggs, pasta dishes, soups and salads!

I purchase the Costco Parmigiano Reggiano Stravecchio that has been aged over 36 months. Its rich, nutty and oh so delish! Waaay better than the grocery store purchased Parm that has little to no flavor in comparison. Give it a try, I think you’ll be convinced!

The left over rind I store in zip lock bags in the freezer and use them in my Pasta Fagioli soup, spaghetti sauces, Risotto and others to enhance the flavor.
