Peanut Butter protein Balls ( no bake!)
These are the perfect little bite to grab with a cup of coffee in the afternoon, throw in a baggie and take with you as a pick up throughout the day, on a trip, or to simply enjoy as a little healthy dessert bite!
No need to cook, or bake. Just mix up in a big bowl with your favorite bits roll in a little ball, refrigerate and enjoy! They keep very well in the frig for a week or so and are delish!
Ingredients
1 Cup (dry) Oatmeal or Muesli
2/3 cup toasted unsweetened Coconut
1/2 cup Peanut butter ( I used chunky)
1/2 cup flax seed or wheat germ
1/2 cup Chocolate chips (optional)
1/3 cup honey
1 tsp vanilla
Mix all ingredients together in a medium bowl until thoroughly combined. Chill in the refrigerator for 30 minutes. With damp hands, roll into balls and place on a parchment lined cookie sheet. (I made mine abut 1” in diameter).
Store in an air tight container and keep refrigerated for up to a week or so.
Makes about 20-25 balls

Substitutions can be made with this recipe and your options are bountiful! Instead of Peanut butter use any favorite nut butter like Almond, sunflower etc.. Other additions could include:
Chopped dried fruit ( dates raisins, apricots..)
Dried berries ( cranberries, cherries etc..)
chopped almonds, pecans, walnuts, sunflower seeds..
other chips (butterscotch, dark chocolate, cocoa, m&ms, etc
other grains (rice cereal, different oatmeal..etc..)
