Banana Coconut Cream Pie
ok, I’ll admit it. I am not a baker, and rarely do I ever make dessert. But for some reason this sounded good and I splurged. Yes, I cut a lot of corners and I mean a lot! But let me tell you it was delish. So easy… Enjoy!
1 Pre-made Pie shell
1 5.1 oz package of Jell-O Banana Pudding and Pie mix
2 1/2 cups milk
2-3 cups fresh Whipped cream( un-sweetened) or 1 container of cool whip
1 1/2 cups unsweetened shredded coconut
2 fresh bananas
Instructions:
Bake the Pie Shell as per the instructions on the box. Let cool completely.
Whisk 2 !/2 cups of milk into the pudding mix and chill.
Whip the cream ( if you are using fresh.) I did as I don’t like to add sugar and I prefer the fresh cream flavor over store bought whip.)
Lightly toast the coconut.
Thinly slice the bananas
in the bottom of the pie shell arrange the sliced bananas in one layer. sprinkle a 1/3 of the coconut over the bananas. pour in the pudding mixture, place another layer of sliced bananas on top and sprinkle another layer of coconut. Top with Whip and sprinkle remaining toasted coconut on top.
