I am a cook, not a baker and not much into sweets and deserts either. But this ? Oh my, it is the best way to end a summer dinner. Light and fresh and when the peaches are perfectly ripe in the summer you just can’t beat it! Heck! you can even make it for a simple treat or snack for the kids. It’s that easy, but tastes so special.

Simple, Simple Summer Desert!!

2 Fresh Peaches halved and pit removed ( skin still on)

1 Pint store bought Vanilla Bean ice cream

1 Package of caramel lace cookie or Belgian style butter thins. (I like Trader Joes Belgian Butter Almond thins )

Make sure your grill grates are clean so the flavor of other food isn’t transferred to the peaches.

On a medium heated grill place halved peaches skin side up onto grill. Cook for 2 min then turn them 90 degrees to create the cross grill marks and cook for another 2 minutes and remove.

Place on individual plates, and place a scoop of ice cream into the “bowl” of each peach and sprinkle with crunched up cookie and serve immediately.
