Teriyaki Chicken Skewers

A wonderful appetizer that is great anytime, and healthy too!

Ingredients

4 Chicken breasts boneless and skinless cut into large chunks

1 bottle of Very Very Teriyaki

20 wooden skewers

Mini bell peppers or large ( I used minis in various colors) cup into 1x1 inch pieces

1 Red onion cut into chunks

1 can of Pineapple chunks of fresh pineapple cut into 1x1 inch chunks

Directions

Immerse the wood skewers in water and soak for at least 1 hour so they won’t burn on the grill.

In a zip lock bag place the cubed chicken and pour in 1/2 of the bottle of Teriyaki sauce over chicken and seal. Refrigerate and let marinate for at least 1 hour.

Meanwhile prepare your veggies and preheat the grill to med high.

Remove the Skewers from the water and pat dry. Thread a piece of chicken, pineapple, onion, pepper, chicken, pineapple onto each skewer in that order.

Spray the hot grill rack with non Stick and grill Skewers for approx 4 minutes each side turning once.
