Parmesan Lemon Roasted Chickpeas
These little gems are a great alternative to classic croutons when your watching your carbs..they also make for a good snack!
1 15 oz can chickpeas ( garbanzo beans)
1 Tbsp olive oil
1/2 garlic powder
1/2 Tsp lemon zest
Sea salt and pepper to taste
2 Tbsp finely grated Parmesan cheese
Preheat oven to 375
line a cookie sheet with parchment paper. Drain, rinse and dry the chickpeas. in a large bowl toss the chickpeas with the other ingredients ( except the parmesan) and spread evenly onto the cookie sheet and bake 45-50 minuets tossing half way through. Remove from oven and sprinkle with the Parmesan.
