Ingredients:

  • 5 egg yolks

  • 2/3 cup mayonnaise

  • 2 teaspoons lemon juice

  • 2 tablespoons Worcestershire sauce

  • 2 teaspoons Dijon mustard

  • 2 teaspoons black pepper

  • 1/4 teaspoon salt

  • 1 teaspoon old bay seasoning

  • 1/4 teaspoon crushed red pepper flakes

  • 1/2 cup crushed, chopped parsley

  • 3 Tbsp chopped chives

  • 1/2 cups breadcrumbs

  • 2 pounds crabmeat

  • 1 cup Panko

  • 1 Tbsp Old bay Seasoning

Servings 6

PREPARATION

STEP 1

Mix mayonnaise, egg yolks, lemon juice, Worcestershire, mustard, pepper, salt, ( 1 tsp) old bay seasoning, red pepper flakes, parsley, chives, breadcrumbs. Gently add crabmeat. 

Make into 4-ounce patties.

Mix the Panko with the 1 Tbsp Old bay seasoning and lightly coat each patty in the panko

Fry on medium to low heat in 1 inch of oil ( I use avocado oil) until golden brown, making sure the center is warm and cooked through using a meat thermometer

Serve with a slice of lemon, tarter sauce, cocktail sauce or remoulade
