Becci’s Kale Chips
1 Large head of curly Kale washed and dried thoroughly
3 Tbsp Extra Virgin Olive Oil
1 Tbsp Salt / and Pepper if desired
Option: you can also add a little cayenne for spice, or flavored salts to alter the flavor profile.
Preheat oven to 350 degrees. Make sure the Kale is very dry. De-stem and roughly chop or tear into bite sized pieces. In a large bowl toss the Kale with the Olive Oil and Salt and pepper. Massage the Kale with your hands making sure it is all well coated, this also makes the Kale more tender and is a great tip for when your making Kale salads as well.
Spread out onto a baking sheet, making sure not to overlap the pieces.
Bake for 20 minutes , ( or until the kale is crispy) tossing them halfway through.
I also found that I could leave them out in a bowl for a day or two (they don’t last long around my house) and they actually got crispier. They are very delicate, so they don’t store well.
