Lemon Herb Nuts
This is the ideal munchie to have on hand to pair with your evening cocktail or glass of vino. I always have them ready to go during the holidays, and in the summer I find them to be a wonderful item to have out in the beginning of every dinner party. These nuts make for an easy game day nibble too and I have even placed them in cellophane bags tied with ribbon and shared them as hostess gifts, dinner party take home treats, and neighborhood holiday gifts. The fresh herbs and lemon zest is fragrant and these tasty salty bites just leave you wanting more. You wont ever go wrong with sharing these!
Lemon Herb Nuts
3 cups Whole Fancy nuts lightly salted ( I like to use Cashews, Almonds, Brazil, Pecans, Walnuts and Filberts
3 Tbsp Extra Virgin Olive Oil
3 Tbsp finely minced Fresh Rosemary
2 Tbsp finely minced Thyme
Zest of 1 lemon
Salt and pepper to taste
Preheat oven to 300 deg. Pour oil into a skillet and heat on medium to low heat until warm. Be careful not to get your burner too hot as the oil will burn. Add the Rosemary, Thyme and lemon zest and stir until aromatic, about 1 minute. Add the nuts to the pan and stir to coat evenly. Toss with Salt and Pepper and transfer to a jelly roll pan or cookie sheet with sides. Bake for about 15 minutes stirring and tossing the nuts every 5 minutes. Let cool and store in an air tight container for up to two weeks.
