Fresh Peach and Goat Cheese Capresse
This is such simple little appetizer, salad or starter for a dinner party, or even for a lunch item. A perfectly ripe slice of peach topped with a crispy panko coated and lightly fried slice of goat cheese, a drizzle of balsamic and fresh basil on top. How could you go wrong!
I used one thick slice of peach for each person and two slices of goat cheese on top of the peach. Make sure your goat cheese is cold when you slice it, and use a piece of wire or unflavored dental floss to slice through cleanly. Place your Panko in a shallow bowl and bread each slice of goat cheese with the Panko. In a skillet on medium heat, add your oil to the pan.( I used 3 tbsp of avocado oil for my 4 slices of cheese, you can use canola as well). Making sure the oil is hot, quickly fry each side till lightly brown and place on top each slice of peach. drizzle with about a teaspoon of good quality balsamic on each stack and sprinkle the julienned fresh basil on top.
This would be wonderful paired with the Dussek Chardonay from Woodhouse Cellars and some crusty French bread if enjoying for a luncheon.
