Scoop this up with Tortilla chips or top your favorite fish or chicken with the versatile salsa. Don’t forget your tacos and fajitas as well! You can add a can of black beans to create “cowboy hash”, or grilled corn cut off the cob too. This is the best summer salsa, so pretty and colorful and just in time for the weekend!

Ingredients:

  • 1/2 red bell pepper; finely diced

  • 2 med-Lg ripe Mangos Peeled and diced

  • 2 Tablespoons red onion; minced

  • 2 Tablespoons fresh cilantro; diced

  • 1 small jalapeño pepper; seeded and minced

  • 2 Tablespoons lime juice

  • 1 Tablespoons lemon juice

  • salt and pepper to taste

INSTRUCTIONS

  1. Combine the mangos, red bell pepper, red onion, cilantro, and jalapeño pepper in a bowl. Add the lime juice and 1 tablespoon of lemon juice, and toss well. Season to taste with salt and pepper, and refrigerate for at least an hour to let all the flavors meld.
