Caramelized Pear and Brie Quesadillas

This is one of my favorite "special" appetizers because it is simply decadent! You truly feel like you are spoiling yourself and your guests. Pair it with a lovely Bubbly or a glass of White. Cheers!

Brie and Caramelized Pear Quesadillas

  • 2 ripe pears 

  • 1 tbsp finely minced Rosemary 

  • 8 oz good quality Brie softened 

  • 3 tbsp Butter

  • 1/4 cup Brown sugar

  • 3 pinches of salt

  • 6 tortillas

  • 1/4 cup Hazelnuts skinned and toasted

  • Saffron oil


Finely chop the Hazelnuts. 

Peal, core, and thinly slice pears. Melt butter in large non-stick skillet over medium heat. Add rosemary. When butter begins to foam add brown sugar and stir until bubbling and dissolved (About 3 minutes). Add pears and gently toss until all pears are coated. Continue to cook pears in sugar mixture, stirring rarely, until pears are lightly browned and releasing juices. Set aside.
In separate large skillet warm the saffron oil on med heat. 


Spread 1/3 of Brie on one tortilla and place one layer of Caramelized pears on top of Brie. Spread 1/3 of the chopped Hazelnuts on top of pears and sprinkle a pinch of salt. Top with second tortilla. Place in warm skillet and brown on both sides until cheese is warm and melted while taking care when flipping it over. 

Remove from pan and let sit for 2-3 min before cutting into fourths. Continue with 2 more and serve on warm stone. 
Serves 4 as an appetizer
