This is such a light full flavored salad of sorts. I could just sit and eat it all on its own and have it for lunch or…I would serve it with seared scallops or grilled shrimp with it and maybe some noodles or fried rice and I think I would be spectacular!

1 Lb snap peas trimmed

1/4 cup sesame seeds toasted

1 tsp sesame oil

3 Tbsp Soy sauce

1 Tbsp Mirin ( rice wine)

2 tsp white vinegar

2 tsp sugar

1 tsp fresh grated ginger

Steam the peas for 1 minute and drain, quickly rinsing them with cold water to stop the cooking. Drain well an pat dry.

In a medium bowl, combine the wet ingredients and stir to blend. toss the peas with the mixture, add the sesame seeds and toss. Let the salad sit for at least 30 minutes to adsorb the flavors. If warm weather, chill in the frighted until ready to serve for a cool crunch!
