Thai Tuna Salad
Sometimes I just get a craving for fresh Tuna Salad. Nothin is better in a wrap or toasted with sharp cheddar on wheat. I thought a new spin on it would be fun, so I tried adding a Thai influence to it to give it a bright new flavor and it turned out quite good! My idea came because I have a small obsession with those handy tubes of fresh herbs that you can buy in the produce section that are so easy to keep in the frig and used at any given moment. Some of my favorites to have on hand are Lemon Grass, Red Chili, Ginger, Cilantro and Basil. In this salad I used the Red Chili, Ginger and Lemon grass, along with some finely chopped veggies. I hope you like it!
Ingredients
2 Cans Tuna drained and flaked
1/2 cup finely chopped cucum
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
1/4 cup finely chopped onion
2 hardboiled eggs chopped
1/4 cup mayo
1 Tbsp ea lemon grass puree, chili pepper spice puree, ginger and sriracha
Combine all ingredients in a large bowl and serve on lettuce wraps, bread, wraps or crackers.
