Chopped Kale Salad with Currants and Pine Nuts

This is the easiest and most delicious kale salad. All it takes is a little chopping and you have a healthy salad that keeps well and travels well. The sweetness of the Craisins and Currants with the nuttiness of the Parmesan and Pine nuts round out the flavors with a hearty crunch to boot!

1 bunch of Kale cleaned, dried and finely chopped

1/2 cup dried Craisins ( I purchased the 50% less sugar ones)

1/2 cup dried Currants

1/4 cup Pine nuts

1/2 cup finely grated Parmesan

1/4 cup pepitas ( pumpkin seeds)

Dressing

juice and zest from 1 lemon

1 Tsp Honey

2 Tbsp Olive Oil

2 Tbsp Red Wine Vinegar

Mix dressing ingredients together in a small bowl.

Mix salad ingredients together in a large bowl and toss with dressing.

Store in air tight container. This salad will keep for a couple days.
