Fettuccini with fresh tomatoes, Mama Lips peppers and Basil and Parmesan
ingredients
6 ounces dried fettuccine
2 cups halved cherry tomatoes
2 large garlic cloves, pressed or finely minced
Basil infused Olive Oil
1/4 cup chopped Mama Lips peppers ( if you can’t find these in your town, they can be ordered online..its worth it!)
1/4 cup chopped fresh basil
1/2 cup shaved aged Parmesan cheese
directions
Cook pasta according to package directions; drain.
Meanwhile, saute tomatoes and peppers in large skillet in the infused Olive oil, add garlic keeping temp low until tomatoes soften and blister. Stir in pasta and basil; heat through.
Sprinkle each serving with Parmesan cheese. Garnish with fresh basil sprigs, if desired.
