Easy, Cheesy Breakfast Quesadillas
2 Tortillas
2 Eggs scrambled lightly ( not over cooked, let them stay a little wet)
4 slices of thinly slice sandwich ham
Finely shredded Mozzarella about a 1/4 cup
Evoo
Warm a large skillet with EVOO and lay 1 tortilla in the pan, sprinkle with 1/2 the cheese, layer 2 slices of ham, spoon in the scrambled eggs and spread out evenly, lay 2 more slices of ham on top of eggs and sprinkle the rest of the cheese and top with 2nd tortilla. lightly press down with your hand or a spatula. cook till browned and flip carefully adding a tad bit more EVOO. crisp and cook till brown on side 2 and melted and warm throughout. Slice into 1/4s and enjoy!
Serve alone or with salsas. Enjoy
