Tortilla Bacon and Egg cups

Ingredients

non stick spray

1 Tbsp Olive Oil

1/2 med onion sliced thinly

3 large slices European bacon or 6 slices of regular bacon

6 small corn tortillas

6 eggs

1/4 cup cream

salt and pepper

1 cup grated cheese (cheddar, muenster, jack, swiss)your choice

14 cup finely chopped zucchini (optional)

2 Tsp chopped parsley

preheat oven to 350 deg.

in a non stick skillet add the Olive oil and sauté the onion, bacon and zucchini over medium heat until bacon is cooked and veggies are tender.

coat a large muffin pan with the non stick spray. line each cup with a tortilla. divide 1/2 the cheese in the bottom of each cup, divide the bacon veggie mix amongst the cups, crack a egg into each cup, drizzle a little cream over the egg and top with the remaining cheese. Sprinkle with a bit of salt and pepper and bake for 18-20 min. Remove and garnish with parsley. ( I like a shot of Tabasco on mine too!)
