Classic Quiche
This easy, basic Quiche uses simple wonderful ingredients and makes for a fancy breakfast, yummy lunch or satisfying dinner. Whether you use a store bought pie crust or make mine from scratch you’ll love biting into this warm and cheesy dish.
Ingredients
Home made pie shell (9 inch crust)
3/4 cups flour
1/2/tsp salt
1/3 cup shortening or butter
3-4 Tbsp ice cold water
Filling
4 eggs, lightly beaten
1 cup Heavy cream
1/4 cup yellow onion diced
1/2 cup cooked good quality ham diced
3/4 cup each Emmental, (or Swiss) and Fontina
Serves 4-6
*Emmental has a slightly stronger, nutty and fuller flavor than a regular store bought Swiss
Directions
Preheat oven to 375F
Measure the flour into a mixing bowl and mix in the salt. Add the fat cutting it in with a pastry cutter until you have the consistency of coarse meal.
Sprinkle with the cold water one tablespoon at a time and mix lightly with a fork until the dough forms together and pulls away from the bowl.
Form dough into a ball on a lightly floured surface and using a floured rolling pin, roll the dough out to one inch larger than the pie dish you plan on using.
place the dough into the pie plate and tuck edges under and finish by pinching the edges of the crust all the way around the plate.
Filling;
In a large bowl mix all of your filling ingredients together and pour into pie shell.
Place the Quiche into your pre heated oven and bake for 35-40 minutes, or until a dinner knife comes out clean when inserted into the center of your Quiche.
