Pistachio Feta Spread

Ok, I decided to post it under Starters and Libations because this could be a appetizer all on its own! This little Spread/ Dip is outstanding and so versatile! Whether your dipping fresh veggies into it, spreading it onto a cracker, smearing it onto a sandwich or serving it along with your Chicken Shawarma or Lamb it will bring a smile to your face I guarantee! Super simple to make with a food Processor
Ingredients
6 ounces shelled pistachio nuts
1/2 cup Olive Oil
12 ounces feta cheese
2 bunches cilantro, leaves only, rough chop
1 bunch of dill, leaves only, rough chop
2 clove garlic, smashed
1/4 cup Greek yogurt
1 lemon, zested
1/2 lemon, juiced
Salt, to taste
Preparation
In a food processor, add olive oil and pistachio nuts and pulse for 1 minute, scrape bowl down with spatula. Add feta, herbs, garlic and pulse for 1 minute. Scrape down the sides of the bowl and add yogurt, lemon juice and zest. Taste and adjust seasoning as needed.
