Loaded Baked Potato Salad

Ingredients:

  • 3 Lbs Gold or Red Potatoes

  • 1 Cup Chopped Cooked Bacon (5-7 slices)

  • 1½ Cups Shredded Sharp Cheddar Cheese

  • 1 Cup Sour Cream

  • 1/2 Cup Mayonnaise

  • 1/4 cup sweet dill relish

  • 3 hard boiled eggs sliced

  • 3 Green Onions - sliced/chopped

  • Handful Fresh Parsley - chopped

  • Salt/Pepper - to taste

  1. Cut potatoes into uniform bite size chunks. Boil in salted water until fork tender. Drain and cool.

  2. Combine potatoes, bacon, cheese, sour cream, mayo, green onions, eggs, relish, parsley, salt and pepper. Stir until fully mixed.

  3. Refrigerate until ready to serve.
