Italian Chop Chop Salad

This Salad is hearty and one that you can put together, chill and wait to toss fresh when your guests arrive!

Ingredients

Salad

  • 1 large head (4 cups) Chopped Romaine Lettuce

  • 1 can (15 ounces; Chickpeas/Garbanzo Beans, drained and rinsed

  • 1 pint Cherry Tomatoes quartered

  • 1/4 cup very thinly sliced Red Onion

  • 1/2 cup Mozzarella Pearls- halved

  • 1/3 cup thinly sliced Genoa Salami

  • 10-12 large Feshe Basil leaves, Julienned

  • 1 cup cubbed English cucumber

  • 1 whole perfectly ripe Avocado cubed

  • 1 can Artichoke Hearts drained and quartered

  • 1/2 cup chopped “Mamas Lils peppers”

  • 1/2 cup sliced black olives

  • 1/2 cup finely ground Parmesan

  • Top with Grilled Chicken, Shrimp or Steak if desired

Just before serving, toss all ingredients LIGHTLY with dressing and serve! Top with Protein if desired.

I used Lite House Red Wine and Olive Oil Vinaigrette to keep it simple, or… make your own! Enjoy
