Italian Chop Chop Salad
This Salad is hearty and one that you can put together, chill and wait to toss fresh when your guests arrive!
Ingredients

Salad
1 large head (4 cups) Chopped Romaine Lettuce
1 can (15 ounces; Chickpeas/Garbanzo Beans, drained and rinsed
1 pint Cherry Tomatoes quartered
1/4 cup very thinly sliced Red Onion
1/2 cup Mozzarella Pearls- halved
1/3 cup thinly sliced Genoa Salami
10-12 large Feshe Basil leaves, Julienned
1 cup cubbed English cucumber
1 whole perfectly ripe Avocado cubed
1 can Artichoke Hearts drained and quartered
1/2 cup chopped “Mamas Lils peppers”
1/2 cup sliced black olives
1/2 cup finely ground Parmesan
Top with Grilled Chicken, Shrimp or Steak if desired
Just before serving, toss all ingredients LIGHTLY with dressing and serve! Top with Protein if desired.
I used Lite House Red Wine and Olive Oil Vinaigrette to keep it simple, or… make your own! Enjoy
