Riced Cauliflower Carbonara

Ingredients

  • 4 cups cauliflower rice

  • 2 tbsp butter melted

  • 2 tsp garlic minced

  • 8 slices bacon cooked and chopped

  • 2 eggs

  • 1/2 cup heavy cream

  • 1/2 cup parmesan cheese grated

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 cup chopped fresh Parsley

Instructions

  • Whisk the eggs, heavy cream, parmesan cheese, salt and pepper together and set aside.

  • Heat butter in a skillet over a medium heat, add the garlic and sauté for 1 minute..

  • Add the cauliflower rice, bacon, salt and pepper, and cook for 5-7 minutes, until rice is hot and tender.

  • Turn the heat right down (the lower the better), and pour the carbonara sauce over the cauliflower rice mixture. Continually stir until all the ingredients are well combined, and the eggs are cooked through (about 1-2 minutes – not too much longer or you might end up with scrambled eggs!)

  • Top with Fresh Chopped Parsley

  • Serve & Enjoy!
