Cheesy Sweet Corn Fritter
This has got o be the best summer side dish! It plays well with others and goes with everything!
Ingredients;
3 cups Sweet corn ( fresh cut off the Cobb) approx 4 ears of corn/ if using canned make sure to drain very well
1 cup flour
1 Tsp baking powder
1/4 cup finely chopped cilantro
juice from 1/2 lime
1 Tsp salt
1 Tsp pepper
1/4 Tsp Chili powder
1/4 cup milk
2 eggs beaten
1 cup shredded Mozzarella or Monterey Jack cheese
1/4 cup thinly sliced green onions
1 Jalapeno, seeds removed and finely chopped
Canola Oil for frying
Add the corn to a large bowl. Add in the cilantro, green onion, diced jalapeño, and lime juice. In a small bowl combine the dry ingredients and stir to mix.
into the corn mixture add the eggs and milk. then slowly add in the dry mixture creating a thick batter.
Heat a large skillet with a drizzle of canola oil till medium hot and place a scoop of the corn batter mixture ( about 1/4 cup each) into the hot oil. Press lightly creating a patty or pancake.
Let the fritters cook in the oil for about 2-3 minutes till golden brown and gently flip cooking the other side. Remove onto a plate lined with a paper towel to absorb any extra oil.
Serve warm with a dollop of sour cream, salsa or a squeeze of lime if desired.
