Rocket with Shaved Parmesan and Balsamic vinegar
How simple can a salad get? But, I found this to be a staple in Europe, Australia and New Zealand and it certainly is in my kitchen!
I love the bitterness of the arugula with the nuttiness of the aged Parmesan and the richness of the balsamic vinegar (especially if you are using an aged vinegar, or one slightly reduced.
Combine 4 handfuls of Arugula/Rocket in a large bowl with 1/2 cup shaved Parmesan and drizzle with the Balsamic vinegar and a very small drizzle of EVOO. Finish it off with a dash of fresh ground pepper and voila!!
Perfect with a pasta dish and a glass of Cab, Yes please!
