Classic Wedge Salad
Why do I always forget about this classic? It is clearly one of my favorites, but somehow I tend to over look it. At a friends home the other night for dinner she served it and I savored every bite! It’s a bit decadent and sinful, but…humph! Simple Romaine with bacon, croutons, Blue Cheese crumbles and good quality BC dressing, ( or make your own).
This salad can take on a spin also by grilling the romaine first. I know that sounds funny, but it adds this gorgeous richness to the salad, and slightly begins to melt the Cheese that is crumbed over the salad.
Easy to do, just take the head of Romaine and trim the bottom of the core without fully removing it. Slice the head of lettuce right down the center length wise and lightly drizzle with Olive Oil. Place cut side down onto your warm grill. Let it cook for about 3 minutes or until it begins to get a slight grill mark. Remove from the grill and place it on your plate grill side up. Sprinkle with chunks of Blue Cheese, Bacon bits, Crusty Croutons and of course crumbled blue cheese and good quality Blue Cheese Dressing. Top with fresh cracked pepper and enjoy!

Add your choice of grilled flank steak, Shrimp or Rotisserie chicken to add a protein and make it a complete meal.
