Homemade Chicken Pot Pie ( or Turkey)

With Store purchased Pie dough, Rotisserie Chicken, Campbells soup, a bag of frozen veggies and some finesse you’ll have them coming back for thirds, I promise!

I’m going to give you two different methods, 1 fast and furious and another using fresh veggies so you can choose what you have time for.

Fast, easy and Furious:

Preheat oven to 425F

Ingredients:

For a standard 9 inch pie pan

***You’ll want to Increase amounts for filling if using a large deep dish or even larger like I did in this photo, and roll out the dough to a slightly larger size on a floured surface.

1 Pkg (2 rolls) Pillsbury Pie crust

3 cups Rotisserie Chicken chopped ( or cooked Turkey breast)

2 cups Frozen mixed veggies (carrots, peas, corn, beans) for example, you choose

1 can Campbells Cream of Chicken soup

1/4 cup milk

1/2 cup Chopped white/ or yellow onion

1 tsp minced garlic

Salt and pepper

1 Tbsp Herbs de Provence / Or Poultry seasoning

1 Tbsp Olive oil

1 Tbsp butter

  • Heat oven to 425°F.

  • Place first pie dough round into pie dish evenly, with edges falling slightly over the pan

  • In 2-quart saucepan, melt butter and olive oil over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender. Add garlic, herbs and toss. Reduce heat and stir in salt and pepper, milk, can of soup until well blended. Turn off heat and add the frozen veggies and chopped meat.stir to combine. Pour into pie shell and top with second pie dough round. pinch around the edges to seal and poke 3 holes using a knife on the top for ventilation.

  • Bake on a foil lined baking sheet to prevent drips ( and for easy clean up)

  • Bake for 35-45 minutes or until golden brown and internal temp reads 140-145

  • Remove from oven and let cool for 5-7 minutes

2nd Option:

Preheat oven to 425F

Same as above but saute the onion, herbs and garlic with:

1 cup each; fresh chopped carrots, celery, green beans for 3-4 minutes or until carrots become sightly tender

Turn off the heat and add:

1/2 cup fresh corn ( or frozen/canned), 1 cup frozen peas, 1 can Cream of Chicken soup ( or cream of mushroom) will work too and milk. Fold all together till blended.

Follow same instructions as above, and Enjoy!
