Teriyaki Shrimp stir-fry with Rice Noodles
BELIKEBECCI TIPS FOR SHRIMP STIR FRY
Use the largest shrimp you can find – I typically use 16-20 count. Be careful not to overcook your shrimp! *If you have time, you can “velvet “ your shrimp which will lock in all the moisture and keep them super tender throughout the cooking process (See Technique below)
To keep this super simple I use SoyVay or Very Very Teriyaki sauce,(they are the best!)
You can use any vegetables you like in this dish such as mushrooms, zucchini, carrots and broccoli.
wanna kick it up a notch? Try adding some sriracha sauce, chili garlic sauce, or crushed red pepper flakes to your stir fry.
Watching your carbs? Serve your stir fry over cauliflower rice instead.
This recipe calls for raw shrimp.( You can sometimes buy your shrimp already peeled and deveined). If the shrimp come with the shells on, you’ll need to remove them. To peel shrimp, it’s easiest to start at the bottom where the legs are attached and carefully pull off the shell and tail.
You’ll also need to devein your shrimp, which you can do by running a small paring knife down the back of each shrimp and removing the dark vein. ( I purchase mine at Costco in a large bag and keep them in my freezer to keep on hand as they defrost quickly for busy weeknight dinners.
INGREDIENTS
For the stir fry:
1 1/4 lbs large shrimp peeled and deveined
3 cups of fresh vegetables, I used snow peas ,onions and sliced bell peppers
3 garlic cloves finely chopped
1/4 cup salted and roasted peanuts
small handful each of Cilantro and Basil chopped
1 Tbsp chili oil
1 Tbsp sesame oil
1/2 cup Store bought Teriyaki sauce, (or homemade)
Optional garnishes: thinly sliced green onions and sesame seeds
1 pkg Rice Noodles
In a small bowl combine the shrimp with the Teriyaki sauce and let marinate for 15 minutes
In a large pot bring 8 cups of water to boil, add rice noodles
For the stir fry: In a large pan heat the chili and sesame oil on high heat and add the vegetables and garlic Cook for 2-4 minutes or until vegetables have started to brown and soften.
Add the shrimp with the teriyaki sauce to the vegetables, Cook for 2-3 minutes or until just cooked through stirring often and flipping the shrimps for even cooking. (shrimp should be pink and opaque). Add the Peanuts, Cilantro and Basil and toss to combine.
Drain noodles
Plate Shrimp and veggies over Rice noodles, garnish with sesame seeds and sliced green onions if desired.
Add Siriacha or Hot chili oil or flakes to spice it up
Velveting Technique:The velveting technique is very easy and gives amazing results. Simply coat strips of chicken, turkey, pork, beef, (or scallops, prawns etc) in a mixture of egg whites & cornstarch before frying in hot oil or poaching in simmering water. I generally use 2-3 egg whites whisked with 1-2 teaspoons of Cornstarch.
