Grilled Sea Bass with Tomatoes, Olives and Mama Lil's sweet Peppers

Ingredients

  • 1 pound sea bass, with skin on

  • 1 tablespoon chili infused olive oil, plus reg olive oil

  • 1/4 cup chopped Mama Lils sweet peppers ( or another brand)

  • 1 cup whole grape tomatoes

  • 1/4 cup black olives, sliced

  • handful of fresh basil chopped

  • 1 teaspoon fresh oregano, chopped

  • 1 clove fresh garlic chopped

  • Best of 1 lemon

  • 1 Tbsp fresh lemon juice

  • Salt and pepper to taste

Instructions

  1. Preheat oven or grill to 450º. ( If using oven, line baking sheet with foil and spray with nonstick cooking spray).

  2. Rub Sea Bass with 2 teaspoons of olive oil. Season well with kosher salt and freshly ground black pepper. Place on baking sheet and roast till fish is flaky, about 15 minutes, or till internal temp reads 145 degrees.

  3. While fish is roasting, add Chili olive oil to a skillet and sauce the garlic with the peppers and olives for 2 minutes. Add tomatoes and olives and cook till tomatoes blister and pop and soften. Add oregano, lemon zest, lemon and fresh basil and remove from heat.

  4. Spoon over cooked sea bass to serve.
