Poblano, Cheese and Italian Sausage Stuffed Flank Steak

This is actually a very simple meal to prepare with a serious WOW factor!
Ingredients:
2-2 1/2 lbs flank steak tenderized
6 oz mild Italian Sausage
2 Poblano Peppers tops cut off and seeds removed
8 oz Cheese cut in half to fit into Poblano such as (pepper jack, Italian herb, Sicilian)
Salt and Pepper
Olive Oil
Heavily tenderize the Flank steak. Cover the steak with a even layer of uncooked Italian Sausage.
Using tongs, blister the peppers over a gas flame or gas grill till browned and blistered and slightly softened. Place peppers into a sealed plastic bag for 5-10 min. remove and remove the skin, leaving just the tender f flesh. Carefully stuff the 2 wedges of cheese into the peppers and place the peppers (open ends facing together in the middle) in the center of the flank steak and roll up into a log. Using baking string, tie the steak off in 1/4’s . Drizzle with Olive oil, and salt and pepper.
Sear the Rolled up Steak on each side using a grill or stove top and oven bake 350 degrees for approx 30 minutes or until internal temp reaches 155-160. Let rest 5-10 minutes, remove baking string and slice.
