BelikeBecci's Amazing Meatloaf
When I make Meatloaf, I want it to be chocked full of flavor and I don’t just mean some spices here and there. This makes 2 full size loafs, because we love to have it for leftovers for sandwiches or sometimes I even take one to a favorite neighbor.
Preheat oven to 375 degrees
Ingredients:
1 1/2 Lb ground lean beef (I use organic)
1 Lb ground turkey
1 Lb ground sweet Italian Pork
1 Lb ground chicken
1 cup breadcrumbs
3 large eggs
2 Tbsp Worchestershire
4 Tbs crushed garlic
1/2 cup chopped parsley
3/4 cup whole milk
2 Tbsp Dijon mustard
4 Tbsp Tomato paste
2 tsp ground thyme
3 Tbsp seasoning salt such as Lawrys
1 medium onion finely chopped
1 Tbsp pepper
8 strips bacon cut in half
1/2 cup bbq sauce ( I use Sweet Bay Rays)
1/4 cup brown sugar
Mix together the first 16 ingredients using a huge bowl and your clean hands (which is one of the best kitchen utensils!)
Spray two standard loaf pans with non stick and divide meat mixture between them. On a diagonal, lay the strips of bacon across the top of each meat loaf. Top each with bbq sauce and sprinkle each with brown sugar.
Place loaf pans on a cookie sheet and place in preheated oven, and bake till cooked through 50 minutes to 1 hour or until met thermometer reads 165 degrees
