My mom would make this on a weekday night for dinner and it was always so juicy, tender and satisfying. I added a small twist on it by using Uncle Dans Ranch Dressing mix ( powder), and I know Hidden Valley or another brand would work as well. Mom just used Salt and Pepper and a bit of garlic powder if I remember correctly, but I wanted to “ jazz” it up as usual.

Ingredients

1 whole Chicken cut up into breast, thighs, wings etc..skin on/bone in

or/ individual pieces of desired chicken pieces already cut up; drumsticks, thighs etc..skin on/bone in

1 package ranch dressing mix ( powder, approx 3 Tbsp)

2 cups all purpose flour

2 cups Buttermilk

1 Tbsp salt

1 Tbsp pepper

1 Tbsp all purpose seasoning such as Lawrys

1 cube butter

2 Tbsp Avocado Oil

Rinse and pat dry chicken pieces. Place into a zip lock bag with the buttermilk and refrigerate for 1 hour, up to overnight.

Preheat oven to 400 degrees. In a large baking pan add the avocado oil and 1/2 the butter. Place into the oven to melt as the oven is warming up.

in a large bowl add all the dry ingredients and mix well. One by one, dredge each piece of chicken into the flour mixture coating well and place into the hot baking dish skin side down. Cube up the rest of the butter and drop onto the chicken and bake for approximately 30-40 minutes or internal temp reaches 160 deg. turning once 1/2 way through.

Chicken should be crispy and browned. If not sufficiently browned, broil at the very end to get desired color.
