Beef Stir fry with Healthy Noodles

So, I picked up these noodles from Costco as a healthy option for pasta when I’m trying to watch my carbs, cals and cholesterol. They are uber handy because you can enjoy them cold or hot, they are already cooked, they have a good texture and flavor and can hold up to light as well as heavy sauces. I love pasta, but this is a good “crutch” when your trying to be “good”.

I purchased the beef already sliced super thin at the market, and chose some of my favorite veggies I had on hand. Thats the nice thing about this dish, is you can customize it with proteins,veggies, and heat level too.

I marinated the beef over night in a Korean BBQ sauce, made up the stir fry sauce, diced up the veggies and away we went! pick and easy.

Ingredients

Serves 2

1 Lb very thinly sliced sirloin note: ( I marinated my steak overnight in a 1/4 cup of Korean BBQ sauce in a zip lock bag in the frig)

1 cup thinly sliced bell pepper ( I used orange, red and yellow)

1/2 cup sliced green onion

1 cup Shitaki mushrooms

1 small zucchini cut in half and cut into spears

1/2 cup shredded cabbage

4 garlic cloves finely chopped

1-2 pkg of Healthy Noodles, drained and rinsed ( depending on how hungry you are!)

2-3 Tbsp Peanut oil

Stir Fry Sauce

1 Tbsp Sesame oil

2 Tbsp Soy Sauce

2 Tbsp Mirin ( sweet cooking wine)

2 Tbsp Oyster sauce

Working in a Wok, set your temp on high.

Stir fry beef for 2-3 minutes and remove onto a plate. Add the Peanut oil and add the garlic stirring for 15-20 seconds, add all the veggies tossing constantly for 1 minute.

Add the beef cack in, add the noodles and pour sauce over all and cook for another 3 minutes or until heated through keeping your temp on high.

Serve in individual dishes and top with sesame seeds, thinly sliced scallions and Sriracha or chili oil for more heat if desired.
