INGREDIENTS

  • 3 cups cooked Prime Rib, Roast beef or steak, cut into bite size chunks

  • 1 lb ground beef

  • 1 small onion chopped

  • 4 garlic cloves minced

  • 1 teaspoon dried oregano

  • 2 -(10 ounce) can cream of mushroom soup

  • cup 1⁄2 sour cream

  • 1 cup fresh mushrooms, sliced

  • 1 Tbsp Worchestershire sauce

  • 1 teaspoon beef bouillon ( I use better than bouillon)

  • 1-2 cups left over Au jus ( or additional beef stock)

  • Salt and pepper to taste

  • 1/2 cup chipped fresh parsley

DIRECTIONS

  • In large skillet over medium heat, saut’e onion in oil about 5 minutes.

  • Add garlic and cook 2 minutes longer. Crumble up ground beef and brown with the onions and garlic. Add mushrooms and cook til tender.

  • Add roast beef and cook until heated through.

  • Add soup, Worcestershire, oregano and bouillon to the meat mixture until blended.

  • In small increments, add the left over au jus until the mixture is the consistency of gravy, rich and creamy.

  • Cook uncovered 8-10 minutes.

  • Stir in sour cream just before serving and heat through.

  • Add fresh chopped parsley

  • Serve over noodles or mashed potatoes.
