Beef Stroganoff
INGREDIENTS

3 cups cooked Prime Rib, Roast beef or steak, cut into bite size chunks
1 lb ground beef
1 small onion chopped
4 garlic cloves minced
1 teaspoon dried oregano
2 -(10 ounce) can cream of mushroom soup
cup 1⁄2 sour cream
1 cup fresh mushrooms, sliced
1 Tbsp Worchestershire sauce
1 teaspoon beef bouillon ( I use better than bouillon)
1-2 cups left over Au jus ( or additional beef stock)
Salt and pepper to taste
1/2 cup chipped fresh parsley
DIRECTIONS
In large skillet over medium heat, saut’e onion in oil about 5 minutes.
Add garlic and cook 2 minutes longer. Crumble up ground beef and brown with the onions and garlic. Add mushrooms and cook til tender.
Add roast beef and cook until heated through.
Add soup, Worcestershire, oregano and bouillon to the meat mixture until blended.
In small increments, add the left over au jus until the mixture is the consistency of gravy, rich and creamy.
Cook uncovered 8-10 minutes.
Stir in sour cream just before serving and heat through.
Add fresh chopped parsley
Serve over noodles or mashed potatoes.
