Salmon with Pesto and Macadamia nuts
This is one of my favorite “go to” dinner that anyone can make. As my husband calls it, Its “restaurant quality”. so whether you're making it for one or a crew, its just so easy to do! Oh! that rhymes..hahha
Makes 2 Portions
2-3 oz Salmon Filet ( I prefer Wild King) skin on
1/4 cup prepared Pesto
1/2 cup chopped Macadamia nuts
Preheat grill to medium-high heat to about 400 degrees. Meanwhile chop the macadamia nuts. With skin side down, coat each Salmon filet with a generous spread of Pesto and sprinkle the nuts on top to coat.
Clean grill grates and brush or spray lightly with non stick or Olive oil and place salmon skin side down (close lid). Cook through, about 5-6 minutes or until internal temp reads 145 deg.
I generally like to serve this with asparagus or another veggie, and a salad. If desiring a starch, my smashed potatoes go well too, enjoy!
