Pulled Pork and Corn Fritter Stack
Instead of having to make this all from scratch, I’ve decided to do a little “hack” on this meal. May I add, this is dinner party worthy! The only item I have you preparing is the corn fritter. I say find your local BBQ joint and let them do the work for you. Dickeys, or Brileys BBQ here in Seattle is my go to on this one. This is a beautiful presentation too!
Ingredients
Servings for 4
1 pint of good quality store purchased Cole slaw
1 Lb Pulled Pork prepared
For the Corn Fritter
1 box Jiffy Corn bread mix
1/2 cup corn
1 Tbsp tobasco
1 small can chopped green chiles
1/4 cup shredded sharp cheddar cheese
1 egg
Canola Oil for frying
Combine all ingredients and mix well.
in a medium hot skillet add 2 Tbsp canola oil. using a soup spoon drop a large spoonful of corn mixture into the skillet and fry on each side for 3-5 minutes or until brown and crisp on each side. Remove and keep warm on a plate.
To build your stack. Place 2 fritters on the dinner plate, mound about a 1/2 cup of warmed pulled pork on the fritters and a large spoonful of slaw on top.
Optional garnishes: Lime wedge, sour cream , cilantro, and additional hot sauce.
