Basic Roasted Chicken
You can always purchased Roasted Whole Chickens at your local market but why not cook your own when it’s so simple to do? It’s a game changer when you roast your own and so much better when it comes out of the oven pipping hot, not to mention its a huge money saver and your home smells so good! Purchasing the two pack at Costco or just baking one, either way you save money cooking your own!
The other nice thing is you can create any flavor profile you want. Herb, Lemon Pepper, Cajun, Mexican herbs, Bbq, Garlic, you name it. This time I was lazy and decided to just do a simple Olive Oil and S&P, and a bunch of garlic over the top that roasted while the chicken cooked. We had the chicken for dinner one night with Potatoes and veggies, and I made a Chicken Tetrazzini the following night using the garlic in my homemade tomato sauce over pasta. (No, it wasn’t very good ;) kidding!!
Depending on your flavor profile, you can make a variety of different dishes with your chicken from quesadillas to Buffalo Chicken dip. The options are endless!
Simple Roasted Garlic Chicken
Preheat oven to 350 deg
1 Chicken Whole
Salt and Pepper
Olive Oil (apron 1/4 cup)
1/2 Cup Garlic Cloves peeled
Liberally cover chicken with Olive oil and sprinkle with S&P. Place on a Foil Lined baking sheet.
I placed the garlic cloves all over the bird and if some fall to the pan that is fine. I was wanting the roasted garlic for flavoring of the Chicken and to use in a separate dish the next night.
Place the chicken on the middle rack of the oven and cook for approx 1 hour 15 min or until the thermometer reads 160 degrees.
Let it rest for 5-10 min and carve.
