Chicken Shawarma Protein Bowl
This dish is perfect for the New Year and after you have prepared my chicken Shawarma and have some left over! It creates a whole different dinner by using the Chicken in a whole new way! Wonderful for lunch too! As a topping to this dish, I used a dollop of the white sauce and a dollop of the Pistachio sauce on top. The sauces mixing with the veggies, Chicken and Quinoa makes for a wonderfully satisfying dish that is so healthy and good for you, not to mention becomes your “dressing”.
2 Servings
2-3 pieces of Chicken Shawarma warmed and chopped
2 cups Cooked Quinoa
1/2 Avocado sliced in 2 pieces
1/2 cup chopped cucumber
1/4 ea Yellow and Red Bell Pepper thinly sliced
thinly sliced red onion to taste
1/2 cup grilled corn cut off the cob
1 slice of Naan Bread warmed and cut into wedges
1/2 cup Hummus
1/4 cup crumbled Feta Cheese
1/3 cup Prepared Pistachio dip (under sauces and spreads)
1/3 cup White sauce( under sauces and spreads)
I begin by placing the warm quinoa in the bowl, and working around the perimeter of the bowl placing the chicken, cucumber, corn, pepper slices, red onion, and hummus. Then top with the avocado and sauces, sprinkle the feta and place the naan on the side to finish.
