Quick Stir Fry
This is such a quick and fast dinner, and delish! Quite often to us, veggies just sound good and hit the spot and other times I crave a protein added to my stir fry’s. This night I opted for big ole shrimp that I buy by the bag at Costco.
Usually I plan for 6 shrimp for my husband and 5 for me as they are large. They cook very fast so watch them.
I stir fry the protein first, not fully cooking it all the way through, then remove it from the Wok. Secondly, I stir fry the veggies for just a couple minutes, add back in the protein and pour the sauce over till heated through.
Another reason I like to flash fry the protein and veggies first is to get a good “fry” on them as well as to be able to lightly brown the meat ( when using chicken, pork or beef) before adding any liquid.
You can customize this recipe using your favorite veggies and protein, using as much or as little as you like. Below is what I used in the recipe this night. I hope you try it and put your own twist on this dish to make your favorite combo! Just remember, you want your veggies crunchy!!
Serves 2
10-12 Large Shrimp
1/2 Zucchini sliced
1 cup snap peas trimmed and cleaned
6-8 button mushrooms quartered
3/4 cup Raw Cashews
1/4 Lg yellow onion thinly sliced
1/4 Red Pepper thinly sliced
6-8 spears of Asparagus cut into thirds
3 Tbsp Canola Oil
For the Sauce
In a small bowl combine and whisk together well;
1/4 cup chicken stock
1/4 cup sherry
1 Tbsp fresh ginger ( or ginger paste in a squeeze tube..so easy)
1 Tsp fresh garlic
1 Tbsp rice wine viegar
1 Tbsp soy sauce
1 Tbsp Sesame oil
1 Tbsp Corn Starch
1 Tsp Chile paste ( to taste)
In a Wok or large skillet add the canola oil and heat to high. Add your protein and stir fry for 2-3 minutes. (Chicken, Pork and Beef may need a bit longer to get a slight browning). Remove from pan and add veggies and stir fry for another 2-3 minutes. Add back in the protein. Pour the sauce in and add the cashews and toss till well coated and sauce begins to thicken. Stir fry mixture for another 1-2 minutes and serve immediately alone or with rice or soba noodles.
Garnish ideas;
green onions thinly sliced and toasted sesame seeds.
