Chilled Avocado and Cucumber Summer Soup

INGREDIENTS

  • 1 medium cucumber

  • 2 ripe small California avocado

  • a dash or two of tobacco or sriracha to taste

  • 1 scallion

  • 1 garlic clove

  • 2 tablespoons fresh coriander leaves

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon fresh lime juice

  • 1/2 cup plain yogurt

  • 1/2 cup cold water

  • 1/2 cup ice cubes

  • Garnish: thinly slice cucumber and Mascarpone Cheese

PREPARATION

  1. Peel cucumber and cut into 4 pieces. Quarter avocado, removing pit, and peel. Cut scallion into large pieces. In a blender or Food Processor purée all ingredients until smooth and season with salt and pepper.

    Serve Soup garnished with a slice of cucumber and a dollop of Mascapone.
