1 medium cucumber
2 ripe small California avocado
a dash or two of tobacco or sriracha to taste
1 garlic clove
2 tablespoons fresh coriander leaves
1 tablespoon fresh lemon juice
1 tablespoon fresh lime juice
1/2 cup plain yogurt
1/2 cup cold water
1/2 cup ice cubes
Garnish: thinly slice cucumber and Mascarpone Cheese
Peel cucumber and cut into 4 pieces. Quarter avocado, removing pit, and peel. Cut scallion into large pieces. In a blender or Food Processor purée all ingredients until smooth and season with salt and pepper.
Serve Soup garnished with a slice of cucumber and a dollop of Mascapone.
